Turkey is of course famous for its kebab dishes but there are a number of other foods that contribute to the traditional cuisine of the country. Meze (the Turkish version of Spanish tapas) is the general name given to a small selection of dishes eaten before the main meal. Meze will normally consist of humus, stuffed vine leaves, minced salad greens mixed with yoghurt or cheese and marinated aubergine. Turkish delight is a national sweet served with coffee or after a kebab and comes in a vast array of flavours. The local drink is an anise-flavoured spirit called raki, sometimes referred to as lion's milk due to its cloudy appearance when mixed with water.
